Our Peanut Butter Chewy bars are the perfect, light snack. These soft, delicious bars are an ideal option to fuel your workout or aid your recovery. They also work as a healthy dessert alternative. We added peanut butter for protein, and oats and cranberries for fiber. Cranberries also provide a dose of antioxidants, along with raw cacao nibs, which are rich in flavonoids.
1/2 cup natural peanut butter
1/3 cup buckwheat honey
1/4 cup vegetable oil*
1 cup raw oats
1/3 cup raw sunflower seeds
1/3 cup cacao nibs
1/3 cup dried, unsweetened cranberries, cut into smaller pieces
In a small bowl, mix oats, sunflower seeds, cacao nibs, and cranberries. Set aside.
In a medium sized saucepan, melt together peanut butter, honey and oil on a low heat.
Remove from heat and add oats mix. Stir well to incorporate.
Spread mixture into an 8×8 pan, lined with parchment paper.
Chill for two hours and then cut into 8-12 equally sized bars. Enjoy immediately or store in the refrigerator for later.
*Your choice of oil will affect the texture of the bars. For example, olive oil will produce softer bars while canola oil will produce firmer bars.
